Honey Vanilla Energy Bites

These delicious, no-bake bars are such a convenient treat. With some protein, fibre, healthy fats, and a touch of sweetness, they make for an energizing snack to power you up.
INGREDIENTS
½ cup Honey Vanilla NuttyHero nut & seed butter
¼ cup liquid honey
½ tsp vanilla
1 cup large-flake oats
¼ tsp cup pumpkin seeds, chopped
¼ cup finely chopped dried unsweetened cranberries
¼ cup unsweetened medium coconut
2 Tbsp chia seeds
1/4 tsp coarse ground sea salt
HOW TO MAKE
1. In a medium bowl, stir together the Honey Vanilla NuttyHero nut & seed butter, liquid honey and vanilla with a wooden spoon until combined.
2. In a small bowl, mix the oats, chopped pumpkin seeds, chopped dried cranberries, coconut, chia seeds, and sea salt.
3. Add the oat mixture into the wet ingredients and stir with a wooden spoon until just combined. With damp hands, mix until completely combined. Set aside.
4. Use a tablespoon measure to scoop mixture and roll into balls. Chill for at least 2 hours until firm. Store bites in an airtight container in the refrigerator for up to 1 week or freezer for up to 1 month.
