Ingredients

For the Salad:

  • 6 stems of kale
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts
  • 1 radish, thinly sliced

For the Dressing:

  • 1/2 cup Original Unsweetened NuttyHero 
  • Juice of 3 limes (just under 1/2 cup)
  • 1 tsp Sriracha sauce
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • A pinch of salt
  • Ground black pepper, to taste
  • Water, as needed to thin

Instructions

1. Prep the Kale

  • Strip the kale leaves off their stems and place them in a large bowl.
  • Tear the leaves into bite-sized pieces.
  • Gently massage the kale with your hands for 1 minute until it softens and turns a deeper green.

2. Add the Goodies

  • Sprinkle in the dried cranberries, walnuts, and sliced radish.
  • Tip: Toast the walnuts in a dry pan for 2–3 minutes for extra crunch and flavour.

3. Make the Dressing

In a small bowl or jar, combine:

  • 1/2 cup nut butter
  • Lime juice
  • Sriracha
  • Dijon mustard
  • Maple syrup or honey
  • Salt and pepper

Whisk or shake well until fully blended. Add water 1 tablespoon at a time to thin the dressing to your desired consistency.

4. Dress It Up

  • Drizzle the dressing over the salad just before serving.
  • Toss well to coat all the ingredients evenly.

Optional Add-Ins & Variations

  • Add grilled tofu, tempeh, or chickpeas for added protein.
  • Swap walnuts for pecans or pumpkin seeds.
  • Toss in some shredded carrot or cucumber for extra crunch.
